Beer is one of the most consumed alcoholic beverages worldwide; however, with consumers more aware food's environmental and nutritional benefits, there a demand for sustainable value-added products. Andean pseudocereals (APS) are becoming trend as gluten-free grains excellent nutraceutical value. Cultivated under extreme climate conditions Peruvian Andes, APS seeds an source starch, fiber, proteins, minerals, vitamins, bioactive compounds such phenolic acids flavonoids antioxidant capacity that provide potential health benefits. This review compilation information studies on general characteristics main quinoa, amaranth, cañihua beer production. In addition, current evidence malting process in its effects beer's nutritional, functional, sensory properties also provided. Based research supporting inclusion formulation foods celiac people, this looks at recent advances applying to develop traditional (GF) beers. Finally, APS's economic, cultural, social importance brewing industry highlighted promote creation innovation fermentative products based their compounds, thus achieving better commercial exploration these ancestral grains.
